  • Egg size- It really does matter. Large eggs are usually the standard for baking. They should also always be at room temperature.

  • Check your oven temperature is correct as well as watch your bake time carefully, Set your timer for a few minutes before the bake time is up to make sure they are not overbaked.

These are a favorite cookie because of the combination of mint and chocolate but you can add those flavors many different ways to make the perfect cookie. These cookies taste amazing.

Mixing the cake mix and other ingredients.

Set oven to 350F. Next, line a baking tray with parchment paper or a silicone baking mat.

STEP 2: Mix ingredients to Form the Cookie Dough and add Mint Chocolate Pieces

In a large bowl, combine the chocolate cake mix, baking chips, vegetable oil and eggs. Beat with an electric mixer for 2 minutes, until a cohesive dough forms with no dry patches. 

STEP 3: Scoop out Cookies onto Cookie Sheet and Bake the Cookies

Use a cookie scoop to portion out 2 Tablespoon cookie balls onto the baking tray, about 3” apart. Bake for 8-10 minutes, until cookies have puffed up and cracks have formed. Cookies will spread as they bake.

STEP 4: Top with Chocolate

Remove the cookies from the oven and immediately place one unwrapped chocolate on each cookie. 

STEP 5: Spread Chocolate to Edges of the Cookies

Allow the chocolate to warm up for 3-5 minutes, then use an offset spatula to spread the melted chocolate over the cookie. Allow the melted chocolate to cool completely and set before storing or serving. Finally, repeat with remaining cookies.
